I just saw Rent: School Edition at a local high school and they did a fabulous job with an Asian Benny, but everyone else was white, including Mimi, though Collins did look a bit Hispanic...

Doesn't necessarily mean that he has to "look Jewish". From personal experience I know that Jews can look all different. There are African American Jews, Asian Jews, Italian Jews... you name it. Mark could be played by just about any ethnicity.

When you have diversity, you have realism. The show is set in New York, and it would be so unrealistic to have an all white cast. If you cast people of a certain race in a certain role, it works.
