For knight, our king just kind of stiffened up while pretending to hold a spear/staff.
For Sir Harry he did the "Prince With Flowing Hair in the Wind" type thing... It worked well in our production because our Harry was a pretty boy.

In my production, it was EXTREMELY sexual.
The King motioned with his hand that he was tall, then he did some pelvic thrust, and then gave himself a pregnant belly (just with his hands ). It was sssssoooo funny!!
I don't know if I would do it for an audition, though..

For Sir harry i think he should put his hands on his hips and Pelvic thrusted? For a Knight he just stiffened right up and put hands behind his back.

It also depends on how your Sir Harry is playing it. In my daughter's production, Sir Harry was rather full of himself, and every time he came on stage he "posed", often looked in his sword handle using it as a mirror. So when the King referenced him, he did an imitation of Sir Harry's stance.

In ours he did:
"a knight" - riding a horse
"sir harry" - hands on hips, puffed out chest

The cast listing was posted today and I didn't get the King Instead, I was given the role of Knight #1. I guess I must make the best of it...

Congratulations, anyway. 'mattress' is a very fun show, and IMHO, one of the best ensembles to be in. you get lots of fun numbers and the whole show is so ridiculously funny that you'll love it.
