definitely for the ball scene a waltz is a must and in the production I was in we just did a lot of fun light movements for the cockney scenes..and they did a simple "dance" for "The Rain in Spain"..we used a lot of circles and we did a can-can type thing (well a ronde-de- jambe sequence sorry I don't know how to spell it) but our show was more dancy for the ensemble than it has to be ..which I liked a lot..the big numbers you should start working on are "Get Me To The Church on Time" and the Ball..other songd with dance are "A Little Bit of Luck" (Reprise) and "Woudn't it Be Loverly" (optional) you cna also add movement into a lot of the songs as you wish..good luck!
