i don't understand why people put Mean Green Mother in the stage show

It doesn't really fit wonderfully, but neither does it "not fit." It gives the plant a big Act 2 showcase number, whereas Suppertime I-II are not big "star moments." If your puppeteers can handle MGM, I like seeing it. It's flashy and exciting.

But would it be possible to do the original ending along with MGM?

Yes- just cut the musical sequence "Bigger than Hula-Hoops," and put the song there in its place. Each attempt on the plant's life takes place during one of the instrumental breaks, that's all.
